*Print off all of this month's recipes, so you have them to refer to.



Prep Day (this is the day after you shop, but before you actually assemble your meals)



1) Place 2 large boneless, skinless chicken breasts in a Ziploc bag. Marinate in BBQ sauce for 24hrs.



2) Line a baking sheet with foil. Place 1lb frozen, cubed Ore Ida potatoes on baking sheet and broil until browned, or as according to package directions.



3) Boil your chickens, cool, then remove skin & bones, and shred meat. Keep shredded meat in a container in your fridge until cooking day. *You can then use the skin & bones of the chicken to make your own chicken broth.
4) While your chickens are boiling, chop all of your vegetables;
  • dice 9 onions
  • slice 2C of celery
  • slice 2C. of carrots
  • peel & cube 4 medium potatoes
  • slice 1 large red onion
* I typically slice and dice more veggies than my recipes call for because I like to sneak them in to other dishes too!

5) Make sauce for Pumpkin Ravioli Casserole, then refrigerate until tomorrow- see recipe


6) Boil 4lbs of fresh, cheese filled Ravioli. Drain. Place in refrigerator for tomorrow.


7) Brown 1lb sausage. Drain.

8) Scramble 12 eggs for breakfast burritos. Go ahead and add browned sausage from step 7, browned potatoes from step 2, 2 cans of Rotel, drained, and 2C shredded Mexican blend cheese. Set filling aside and refrigerate for tomorrow.

9) Shred/Grate 12oz. Provolone Cheese and 12oz. Gouda cheese for BBQ Chicken Pizza.

10)If making your own pizza crust, go ahead and make it now, wrap in saran wrap tightly, and place in refrigerator.

11) Cube your round steak if you did not purchase it already cubed. Refrigerate.
Get a good night's rest. Tomorrow will be a long day!



Cooking Day

1) Start your crock pot meal. Vegetable Soup.

2) Preheat oven to 350. Line a small baking dish with foil and PAM. Place BBQ marinated chicken breasts in baking dish and bake for 30 minutes, or until chicken is tender and no longer pink. Remove from oven. Let cool, and then dice cooked chicken.

3) Make Pumpkin Pancakes, let cool.

4) Start Chimichangas. In a large skillet, combine chicken, salsa, refried beans, undrained chili peppers, and Taco seasoning mix. Cook over medium heat until heated through.

5) Fill flour tortillas with Chimichanga filling & then Breakfast Burrito filling. Wrap the Chimichangas in foil, and the Breakfast Burritos in Saran wrap. Set aside and let cool.

6) To flash freeze pumpkin pancakes: lay them on a baking sheet and place into freezer until frozen. Remove from freezer, place in freezer bags or containers. Label, and freeze.

7) Assemble Pumpkin Ravioli Casserole recipe. Place dish in freezer to partially freeze. Once frozen enough to hold its shape, remove from freezer and remove casserole from dish. Then, place casserole into freezer bag or vacuum sealer bag. Label, and freeze.

8) Assemble BBQ Chicken Pizzas. Wrap several times in Heavy Duty Foil. Label. Freeze.

9)Place cooled Chimichangas and cooled Breakfast Burritos into Ziploc bags/containers/vacuum sealer bags. Label. Freeze.

10) Assemble Buffalo Shrimp. Label Ziploc bag. Remove as much air as possible from Ziploc bag. Freeze.

11) Preheat oven to 400. Make Meatball Nirvana.

12) Assemble Brown Sugar Meatloaf. Do not bake. Wrap tightly in foil. Partially freeze meatloaf until it is solid enough to remove from pan. Continue wrapping tightly in foil. Place meatloaf in Ziploc bag/vacuum sealer bag and label and freeze.

13) Turn off crock pot. Place Vegetable Soup in Ziploc bags. Label. Let cool, then freeze.

14) Clean up the kitchen! Get someone to give you a foot massage. You deserve it!
